Noodle Legend Minestrone

Chinese and Italian cuisines may not be the most obvious combination, but the fresh ingredients in this hearty minestrone work really with the fragrance of the flavours of the Noodle Legend spices. It's a great recipe to use up odds and ends of dried noodles you might have at home, or you can use the same amount of rice or even a tin of drained chickpeas or beans if you prefer.

Shopping List

  • 2 rashers of bacon (any type) - thinly sliced
  • 1 bunch of spring onions - thinly sliced
  • 1 large carrot or 2 sticks of celery - peeled and cut into small bite-size pieces
  • 150g cabbage or spring greens - cut into thin bite-size pieces
  • 4 tomatoes - roughly chopped
  • 3 cloves of garlic - finely grated or crushed
  • 50g dried noodles (any type) or use pasta - broken into small bite-sized pieces
  • 2 tbsp tomato puree
  • 2 tbsp soy sauce (any type)
  • 1 stock cube (chicken or vegetable) (optional)
  • 1 tsp sugar
  • 1 tbsp cornflour
  • 30g grated parmesan to serve (optional)
