Poc Chuc

Poc chuc is a Mayan dish from the tropical southern part of Mexico that uses the unique sour oranges that grow in the region to make a tangy, fragrant marinade and salsa for grilled meat. You can use a mix of orange and lime to get the same effect, and the fresh, zingy and spicy flavour is fabulous at a barbeque - it really makes a delicious change from all those bog standard sweet and sticky marinades!

  • 4 chicken breasts or boneless thighs (skinless) or use meat-free chicken fillets
  • ½ a small red onion - cut into wedges
  • 2 cloves of garlic - finely grated or crushed
  • 1 tomato - left whole
  • 1 chilli (any colour) - left whole
  • 2 oranges
  • 2 limes
  • Salad, beans or tortillas to serve
