Sweet pumpkin, smoky bacon and moreish beans are given the Taco Legend treatment in this month's club recipe. The combination of flavours work really well together and it makes a lovely main dish with some jacket potatoes, or serve as a side when you're having tacos!

  • 4 rashers of bacon (any type) or use vegan bacon
  • ½ butternut squash or pumpkin (about 600g in total)
  • 2 cloves of garlic
  • 10g bunch of coriander (optional)
  • 1 tbsp tomato puree
  • 400g tin of beans in water (any type)
  • 2 tsp vinegar (white wine or cider vinegar is best)
  • 1 tsp sugar
  • Jacket potatoes and sour cream to serve
