Red Pepper & Halloumi Kebabs with Salsa Verde

Halloumi is a deliciously salty, 'squeaky' cheese from Cyprus, with a firm texture and high melting point that lends it really well to being grilled. Here we're serving it with a fresh and zingy salsa verde (green herb sauce) to make a delicious, colourful meal that will even be a big hit with the most committed carnivore at any summer BBQ!

  • 2 x 250g blocks of halloumi cheese
  • 1 red onion
  • 1 clove of garlic
  • 30g bunch of coriander or parsley
  • 2 red peppers (or use a mix of colours)
  • 1 lemon
  • 1 tbsp tomato puree
  • 75ml olive oil
  • Flatbreads or couscous to serve
