This is our wintery version of masala pav, a street food hailing from Mumbai that was originally invented to feed factory workers on their breaks.

The butter, lemon and spices stirred in at the end elevate this from simple veg curry to something completely delicious!

Shopping List

  • 400g floury potatoes - peeled and cut into bite-size pieces
  • 400g mixture of root veg (eg sweet potato, parsnip, carrot etc) - peeled and cut into bite-size pieces
  • 1 large red onion - finely chopped
  • 2 cloves of garlic - finely chopped
  • ½ lemon
  • 400g tin of chopped tomatoes
  • 50g red lentils
  • 75g butter (plus extra for frying the rolls)
  • 4 white bread rolls to serve
