Taco Legend Gazpacho

This recipe is based on Seville-style gazpacho, made with tomato, cucumber and onion. Our Taco Legend version here uses lime juice instead of sherry vinegar, chillies (as well as peppers) for a bit of a kick, and is finished with a drizzle of CHIPOTLE olive oil and chopped avocado for a delicious Spanish/Mexican combination!

  • 6 tomatoes
  • 1 pepper (any colour)
  • 1 chilli (any colour)
  • ½ cucumber
  • 1 avocado (optional)
  • 3 limes
  • 1 tbsp tomato puree
  • 20g breadcrumbs or pieces of tortilla
  • ¾ tsp sugar
  • 3 tbsp extra virgin olive oil
  • 4 ice cubes to serve
