Taco Legend Locro de Papa

A rich and comforting dish from the Andes mountains in Ecuador, Locro de Papa is a thick potato and cheese soup topped with fresh avocado and coriander. In this Taco Legend version we're using our CHIPOTLE BLEND to make a flavoured oil that adds a lovely smoky depth as well as a rich colour to this simple recipe.

Shopping List

  • 1kg floury potatoes (or a mix of floury and sweet potatoes) - peeled and cut into bite-sized pieces
  • 1 onion - finely chopped
  • 2 cloves of garlic - finely chopped
  • 1 avocado - cut into bite-sized pieces
  • 1 lime - cut into wedges
  • 10g bunch of coriander (optional) - roughly chopped
  • 100ml milk (any type)
  • 125g strong cheese (any type) - coarsely grated
