Taco Legend Pav Bhaji

Pav bhaji is a delicious street food originating in Mumbai, made from a rich vegetable (bhaji) and lentil stew served on soft, buttery rolls (pav). Here we've got a Mexican version flavoured with our Taco Legend blends, using black beans rather than lentils, and sweet autumn veg to make a really easy but immensely satisfying dinner.

Shopping List

  • 600g mix of sweet potatoes, squash or carrots
  • 1 large red onion
  • 3 cloves of garlic
  • 10g bunch of coriander (optional)
  • 2 peppers (any colour)
  • 3 tomatoes
  • 1 lime
  • 75g butter
  • 1 tbsp tomato puree
  • 198g tin of sweetcorn (including all the liquid from the tin)
  • 400g tins of black beans, kidney beans or pinto beans
  • Sour cream to serve
  • 4 bread rolls to serve
