Tandoori Cauliflower

Cauliflower, or gobi, is popular in Indian cooking because it’s widely grown and so versatile.
Here it’s left whole and coated in spiced butter and yogurt before roasting in a very hot oven to make a stunning centrepiece - just make sure your cauliflower gets the all important tandoori char around the edges!

  • 150g natural yogurt (full fat is best)
  • 50g butter - at room temperature
  • 1 tsp sugar
