Tarragona-style Romesco Rice

Inspired by Tarragona-style romesco sauce traditionally served with calcots, this light and delicious arroz caldo (brothy rice) develops its flavours from the charring of the vegetables and almonds as well as the smoky, spicy Taco Legend blends. It makes a perfect spring lunch with some good bread and a fresh green salad.

Shopping List

  • 2 bunches of spring onions
  • 1 onion
  • 5 cloves of garlic
  • 4 tomatoes
  • 3 peppers (any colour)
  • 1 lime
  • 150g sour cream
  • 2 tbsp tomato puree
  • 1 tbsp vinegar (wine or cider vinegar is best)
  • 50g flaked almonds or chopped hazelnuts
  • 1 stock cube (chicken or vegetable)
  • 200g rice (short grain is best but any type is fine)
