Thoran is a dish from South India of stir-fried shredded vegetables cooked with shredded coconut.
It’s not cooked for very long so the vegetables retain their crunch and add a bit of texture to your meal.

- 300g mix of spring veg (e.g. spring onions, asparagus, purple sprouting broccoli etc) - thinly sliced
- 3 tbsp dessicated coconut
- A handful of cashew nuts (optional)
