Tomato Corn Chowder

This is a really delicious meal that's filling and satisfying from the corn and sweet potato, but also bright and fresh from the lime and coriander. You can add some more colour and texture by serving it with a few pieces of chopped avocado on top, making it a lovely late-summer lunch with some crusty bread on the side!

  • 1 onion - finely chopped
  • 6 tomatoes - roughly chopped
  • 500g sweet potatoes or any type of potatoes - peeled and cut into small bite-size pieces
  • 3 cloves of garlic - roughly chopped
  • 10g bunch of coriander (optional) - roughly chopped
  • 1 lime
  • 320g approx. tin of sweetcorn (including all the liquid from the tin)
  • 2 tbsp tomato puree
  • 1 stock cube (chicken or vegetable) (optional)
  • 2 tbsp plain flour
  • Sour cream to serve
