Tsigareli

Tsigareli is a simple veg dish from Corfu in which greens are cooked with garlic, olive oil, tomato and - unusually for modern Greek cooking - a pinch of hot spices. Corfu was fought over for centuries (particularly between the Venetians and the Ottomans), and it’s likely the local taste for spices came from these settlers.
