Autumn Fruit Tagine

This month we’re celebrating harvest with a sweet and fragrant fruit tagine. You can use any mix of apples, pears or even quince (although quince may take longer to cook) - the combination of the fruit with the spices, sugar and butter gives a lovely rich flavour as well as filling the kitchen with wonderful smells as it cooks!

Shopping List

  • 500g diced chicken (thighs are best) or use 2 x 400g tins of chickpeas (drained) for a veg version
  • 1 large onion
  • 3 cloves of garlic
  • 10g bunch of parsley or coriander
  • 500g apples or pears (any type)
  • 25g butter
  • 3 tbsp tomato puree
  • 1 tbsp sugar
