Beansprout Salad

In this simple Sichuan-style side dish, plain beansprouts are given a fabulous new life with lots of sesame oil, vinegar and soy sauce. The star of the show is a spicy seasoning made by pouring boiling hot oil over dried spices and garlic so they instantly sizzle in the heat, imparting all their colour and flavour to this delicious dressing.

Shopping List

  • 250g beansprouts or use 1 x 400g tin of beansprouts - drained and rinsed
  • 1 clove of garlic - finely grated or crushed
  • 10g bunch of chives or use 2 spring onions (optional) - thinly sliced
  • 1 tbsp soy sauce (any type)
  • 1 tbsp vinegar (rice, white wine or cider vinegar is best)
  • ½ tsp sugar
  • 1 tbsp sesame oil
