Bhuna is a mild curry with lots of complex flavours - it describes the cooking technique of first frying the onions, garlic and spices in hot oil to form a dark brown paste then adding the meat resulting in a deeply-coloured, rich and thick sauce coating the tender meat.

  • 500g diced chicken (thighs are best)
  • 1 medium red onion - roughly chopped
  • 3 cloves of garlic - finely chopped
  • Fresh ginger - finely chopped to make 2 tsp
  • 2 medium tomatoes - cut into wedges
  • 2 green chillies (optional) - thinly sliced
  • ½ lemon
  • 50g natural yogurt (full fat is best)
  • 1 tsp sugar
