Broccoli with Garlic

Crispy golden fried pieces of garlic are a favourite topping in many parts of Asia, and often appear sprinkled on top of noodles, salads or rice dishes. Here we use the garlic-flavoured cooking oil used to make them for a dressing on simply cooked greens, and the resulting crispy garlic on top gives a nice textural and flavour contrast, as well as looking spectacular!

  • A pinch of sugar
