It’s a simple curry served in a hollowed-out loaf of bread (it was originally served as a streetfood and the bread made it portable - it soaks up all the juices and is possibly the best part!).

  • 500g diced chicken (thighs are best)
  • 2 medium onions - finely chopped
  • 2 cloves of garlic - finely chopped
  • 3 medium tomatoes - roughly chopped
  • 1 tbsp tomato puree
  • ½ lemon
  • 4 crusty bread rolls - cut in ½ and hollowed out
