Chicken cafreal, one of Goa’s most famous dishes, is the very much greener cousin of tandoori chicken.

The marinade for the chicken is a fresh and tangy paste made from coriander, green chilli and spices - if you have time marinate overnight and cook it on the BBQ!

  • 4 chicken legs - slashed through to the bone in a couple of places
  • 25g bunch of coriander
  • 2 cloves of garlic - roughly chopped
  • 2 green chillies - roughly chopped (seeds removed if you’d prefer less heat)
  • 2 tbsp vinegar (white wine or cider vinegar is best)
