Chicken shatkora is a sour curry made with a special citrus fruit from Bangladesh, but grapefruit is an excellent alternative. It’s one of the few specifically Bangladeshi recipes which can be found in British Indian restaurants, and is a great introduction to the wonderful flavours and unique ingredients of Bangladeshi cuisine.

  • 500g diced chicken (thighs are best)
  • 1 onion - roughly chopped
  • Fresh ginger - roughly chopped to make 1 tbsp
  • 1 grapefruit (any colour) - 3 large pieces of peel removed (discarding any pith) then juiced, or 3 large pieces of shatkora and the juice of 1 lemon
  • 20g butter
