This soup is a really satisfying dish, full of the sweet fragrance of star anise and sesame oil. It's thickened with cornflour, then has cooked shreds of egg stirred through to add a wonderful texture and visual appeal.   • 1 large chicken breast or skinless thighs (approx. 250g total weight)
  • 1 small onion - finely chopped
  • 1 clove of garlic - finely grated or crushed
  • 1 tbsp chopped coriander or chives (optional)
  • 1 egg (any size) - beaten with 1 tbsp water to a smooth texture
  • 325-340g tin of sweetcorn - drained
  • 3 tbsp cornflour
  • 1 chicken stock cube
  • Sesame oil to serve
