Spicy (picante!) chorizo is very popular in Mexico as a taco filling. Unlike the Spanish version found in the UK, in Mexico it's usually made with fresh meat rather than smoked or cured, so here we're spicing up fresh sausagemeat to make a fantastic substitute for the stuff you'd find in a Mexican market!
