Dirty rice is so-called because the sausage or liver that it's cooked with tends to result in a slightly ‘dirty’ appearance. It’s these bits that pack all of the delicious flavour though, and this Cajun classic made with the holy trinity of onion, celery and capsicum makes a tasty change from standard boiled or steamed rice.
