Kofte in Sumac Sauce

Sumac is a spice made from the dried berries of the sumac plant which is native to the Middle East and gives a delicious fruity tang as well as a spectacular colour. Here it’s the main seasoning in the kofte sauce, which is lovely and piquant with a beautiful depth of flavour.

  • 500g lamb mince
  • 2 large carrots
  • 1 onion
  • 3 cloves of garlic
  • 10g bunch of parsley, coriander or mint to serve
  • 50g bulgur wheat or use couscous or breadcrumbs
  • 2 tbsp tomato puree
