Kottu Roti

Kottu translates from Sinhalese as chopped, and this hugely popular Sri Lankan street food consists of chopped up roti, stir-fried with chicken, vegetables and egg.

It’s typically cooked on a heated iron sheet using two blunt blades to mix and chop - a distinctive sound which can be heard everywhere in Sri Lanka!

Shopping List

  • 500g diced chicken (thighs are best)
  • 1 red onion - thinly sliced
  • Fresh ginger - roughly chopped to make 1 tbsp
  • 2 cloves of garlic - roughly chopped
  • 1 carrot - peeled and coarsely grated
  • ¼ cabbage (any type) - thinly shredded
  • 3 eggs (any size) - beaten
  • 2 chapatis, pitta breads or tortilla wraps - cut into bite-size pieces
  • 1 tbsp tomato puree
  • 1 tbsp soy sauce (any type)
