‘Ma’ means numbing, and ‘la’ means hot - a pretty apt description of our MA LA blend, but it's not quite as intimidating as the name might suggest! ‘Numbing’ is a distinctively Chinese flavour profile and comes from the inclusion of Sichuan pepper, which has a tangy, citrus flavour and leaves an unusual, lingering and strangely addictive tingling effect on the tongue. We’re mixing the toasted ground Sichuan pepper with a pinch of white pepper and ground red chilli for a little touch of ‘la’ (heat), as well as a bit of mild paprika, fennel, ground coriander and ground cumin to make a blend that’s powerful and fragrant, but still mellow enough to use with confidence.
