Chinese pickles are often made with salt or brine, but to fast-track the process here we're using a vinegar solution flavoured with garlic and our MA LA BLEND which gives that lovely citrussy numbing flavour of Sichuan pepper, as well as a touch of heat from white pepper and dried chilli. Serve with any rich or oily Noodle Legend main course, or even as a side dish at a barbeque!
