Our masa fried chicken (MFC for short!) is a fantastic Mexican-American mashup. In place of traditional buttermilk the chicken is marinated in sour cream, and the subtly spiced, crispy coating consists of Mexican masa harina (or polenta) and cornflour which provides extra crunch.

  • 75g sour cream
  • 100g masa harina (Mexican maize flour) or fine polenta
  • 25g cornflour
  • Oil for frying (sunflower or vegetable oil is best)
