Mashwiya is a spicy, tangy dish of roasted vegetables from Libya that’s close to a Mexican salsa in many ways, but the seasonings of cumin, caraway, black pepper and Aleppo chilli anchor it firmly in North Africa. Leave the seeds in the green chillies for extra heat!
