Mezze Legend Borscht

Borscht was invented by the Cossacks in the 17th century during a siege by the Turkish army. They cooked everything in one pot, resulting in a thick and nourishing soup that's a fixture of Eastern European cuisine, and this version is subtly flavoured with our Mezze Legend blends for a delicious twist on a European classic.

  • 500g beetroot (raw or cooked) - peeled and coarsely grated
  • 1 carrot - peeled and coarsely grated
  • 1 onion - finely chopped
  • 2 tomatoes - roughly chopped
  • ¼ small cabbage (any type) - thinly shredded
  • 3 cloves of garlic - finely grated or crushed
  • 10g bunch of dill or parsley (optional) - roughly chopped
  • 25g butter
  • 1 tbsp vinegar (wine or cider vinegar is best)
  • Sour cream to serve
