This curry is influenced by the Moghul Empire whose Persian-inspired cuisine was intricate and expensive to prepare.
This was due in part to their use of costly ingredients such as cream and almonds. Rich, delicate and mildly spiced, this curry is delicious served with rosé wine.

  • 500g diced chicken (thighs are best)
  • 1 onion - roughly chopped
  • 2 cloves of garlic - roughly chopped
  • Fresh ginger - roughly chopped to make 2 tsp
  • 10g coriander (optional) - roughly chopped 
  • 20g butter
  • 50ml cream (any type)
  • 50g natural yogurt (full fat is best)
  • 25g ground almonds
