Moroccan Tomato & Pepper Dip

This dish (known as matbukha) is a simple dip of roasted peppers and tomatoes from the Maghreb (modern day Morocco, Tunisia, Algeria and Libya). It’s great as a mezze or a condiment in sandwiches, and even makes a useful base for a stew or to make shakshouka - just heat with a splash of water before cracking eggs into the rich sauce.
