  • 1kg fresh mussels - scrubbed clean (discard any that are cracked or open)
  • 100g shallots or 1 small red onion - finely chopped
  • 2 cloves of garlic - finely chopped
  • 10g bunch of coriander - finely chopped (to serve)
  • 25g butter
  • 100ml double cream
  • 150ml white wine or beer (optional - or substitute with water)
