  • 2 aubergines or courgettes
  • 500g potatoes (any type)
  • 1 large red onion
  • 4 cloves of garlic
  • 50g butter
  • 400ml milk (any type)
  • 1 egg yolk (optional)
  • 30g parmesan cheese
  • 400g tin of tomatoes
  • 2 tbsp tomato puree
  • 50g plain flour
