Noodle Soup with Crispy Garlic

A noodle soup is a staple meal across China and South-East Asia, and this simple recipe flavoured and topped with crispy garlic is really easy to make but also allows you to customise it any way you prefer. Add chopped fresh chillies or chilli oil for extra heat, pickled vegetables for acidity and crunch, or even a halved boiled egg on top for extra richness and texture!

Shopping List

  • 250g pork or beef mince
  • 100g greens (eg tenderstem broccoli, spring greens, pak choi etc) - cut into bite-size pieces if large
  • 3 cloves of garlic - thinly sliced
  • Fresh ginger - finely chopped to make 2 tsp
  • 10g bunch of coriander (optional) - roughly chopped
  • 300g pre-cooked noodles (any type) or use 100g-125g dried noodles
  • 1 tbsp miso paste (any type) (optional) or use 1 extra tbsp soy sauce
  • 1 tbsp soy sauce (any type)
  • ½ tsp vinegar (rice, white wine or cider vinegar is best)
  • ¼ tsp sugar
  • 1 stock cube (chicken or vegetable)
  • 1 tsp sesame oil
