Pav bhaji is a street food hailing from Mumbai originally invented to feed factory workers on their breaks.

All the main ingredients you’d normally see in an Indian meal are combined in a single sauce highly seasoned with herbs and spices and a sharp tang of lemon.

  • 1 large red onion - finely chopped
  • 2 cloves of garlic - finely chopped
  • 2 medium carrots - peeled and cut into bite-size pieces
  • 400g floury potatoes - peeled and cut into bite-size pieces
  • 150g green beans - chopped into 3cm lengths
  • ½ lemon
  • 400g tin of tomatoes
  • 50g red lentils
  • 75g butter plus extra for frying the rolls
  • 4 bread rolls to serve
