Pineapple Curry

This unusual curry is inspired by the fruit curries of Sri Lanka where dishes like this are often served as part of a spread containing multiple dishes of contrasting flavours, colours and textures. The sweet pineapple contrasts really nicely with the mild creamy sauce, and the whole thing is given a fabulous fragrant depth of flavour by the spices to make lovely and very simple curry to serve alongside any rich and spicy main course.

  • 1 medium pineapple (or 400g ready-prepared) - cut into bite-size pieces
  • 1 onion - finely chopped
  • Fresh ginger - finely grated or chopped to make 2 tsp
  • 400ml coconut milk (full fat is best)
  • 2 tsp mustard (any type) (optional)
  • 1 tsp sugar
