Ras el Hanout is a North African spice blend which loosely translates as 'top of the shop', or 'top shelf', in reference to the best spices the shop has to offer. The exact recipes are a closely guarded secret with some blends including as many as 20 ingredients.

INGREDIENTS: Cardamon seeds, cassia, bay leaves, allspice, fennel seeds, caraway seeds, long pepper, cubeb pepper, rose petals, lavender, black pepper, cumin, mace, black cardamon, coriander, rose petals, cayenne pepper, sweet paprika, turmeric, galangal, nutmeg, ginger, cloves, saffron

Uses

Add 1 tbsp to a simple tagine or mix 2 tsp with the juice of 1/2 a lemon, 1 tbsp of oil and 1/2 tsp salt and use as a marinade for chicken or fish for 4.
