Root Veg Pakora with Dried Fruit Chutney

A classic Indian snack or starter and close relative of the bhaji, pakoras come in many different variations. They're sometimes made with whole or thickly sliced fresh vegetables, but here we using grated seasonal root veg to make a vibrant autumnal version, served with a sweet and spicy dried fruit chutney on the side.

Shopping List

  • 400g root veg (eg carrots, parsnips, beetroot etc)
  • 15g bunch of coriander
  • 75g dried fruit (any type)
  • 1 tbsp vinegar (white wine or cider vinegar is best)
  • 2 tsp sugar
  • 100g self-raising flour or use gram (chickpea) flour mixed with ½ tsp baking powder
  • Oil for frying (sunflower or vegetable oil is best)
