They're sometimes made with whole or thickly sliced fresh vegetables, but here we using grated seasonal root veg to make a vibrant autumnal version, served with a sweet and spicy dried fruit chutney on the side.

400g root veg (eg carrots, parsnips, beetroot etc)
15g bunch of coriander
75g dried fruit (any type)
1 tbsp vinegar (white wine or cider vinegar is best)
2 tsp sugar
100g self-raising flour or use gram (chickpea) flour mixed with ½ tsp baking powder
Oil for frying (sunflower or vegetable oil is best)
