Salt & Pepper Traybake

This month we've got an easy all-in-one traybake with the delicious flavours of Chinese salt & pepper seasoning. The mix of star anise (from our BADIAN BLEND) with the heat of dried chillies and the fragrance of Sichuan pepper is a fabulous combination, and works really well in this simple recipe.

Shopping List

  • 4 chicken legs or large thighs or use 8 whole field mushrooms for a veg version
  • 1kg potatoes (any type) - cut into wedges or use oven chips
  • 1 onion - cut into bite-size pieces
  • 3 peppers (any colour) - cut into bite-size pieces
  • ½ a bunch of spring onions - thinly sliced
  • 4 cloves of garlic - roughly chopped

BADIAN BLEND: 1 tsp

LA JIAO BLEND: ½ tsp

MA LA BLEND: 2 ½ tsp

ZHIMA BLEND: 5 tsp
