Sichuan Potato Salad

Potatoes are a very popular ingredient in Northern and Western China, and are often very thinly shredded then stir-fried with vinegar and dried chilli to make a spectacular side dish. Here we're using the same seasonings of soy, sesame oil, vinegar, dried chilli and fragrant Sichuan pepper to make a simple potato salad which goes well with any Noodle Legend main course, or even as a side dish for a barbeque or picnic!

Shopping List

  • 750g waxy potatoes - left whole
  • 1 clove of garlic - finely grated or crushed
  • 10g bunch of coriander - roughly chopped
  • 1 tbsp soy sauce (any type)
  • 1 tbsp vinegar (rice, white wine or cider vinegar is best)
  • ½ tsp sugar
  • 2 tsp sesame oil or use sunflower or vegetable oil
