Smashed Cucumber

This unusual method of preparing a cucumber salad is unique to China, and involves smashing (or smacking) a cucumber along its length. This process breaks up some of the cells which release more of the juice and also creates a really varied texture with lots of tiny cracks for the delicious dressing to find its way into!

Shopping List

  • 1 large cucumber
  • 1 clove of garlic - finely grated or crushed
  • 20g bunch of coriander - cut into 2cm lengths
  • 1 tsp soy sauce (any type)
  • 2 tbsp vinegar (rice, white wine or cider vinegar is best)
  • A pinch of sugar
  • 1 tbsp sesame oil or use sunflower or vegetable oil
