Spinach Borani

Borani is a classic Iranian salad dish of cooked vegetables dressed in yogurt, usually served as part of a cold mezze selection. It’s easy to make and works with all sorts of different veg - here we’re using silky-soft spinach for a really simple, but very satisfying mezze dish.
