Stir-Fried Mushrooms

China is both the world's biggest producer, and the biggest consumer of mushrooms and they're widely eaten fresh during the autumn or dried and used throughout the year for both food and herbal medicines. The flavours of soy sauce, star anise and garlic really complement mushrooms and in this simple dish you can use any mix of mushrooms you prefer.

Shopping List

  • 400g mushrooms (any type) - cut into large bite-size pieces
  • 1 bunch of spring onions - cut into 3cm lengths, white and green parts separated
  • 3 cloves of garlic - finely grated or crushed
  • Fresh ginger - finely grated or chopped to make 1 tsp
  • 2 tbsp soy sauce (any type)
  • 1 tsp vinegar (rice, white wine or cider vinegar is best)
  • ½ tsp sugar
  • 1 tsp cornflour
  • 1 tsp sesame oil (optional)
