  • 1 small onion - finely chopped
  • 3 cloves of garlic - finely grated or crushed
  • 500g tomatoes - roughly chopped
  • 1 green chilli (optional) - finely chopped
  • 10g bunch of coriander (optional) - roughly chopped
  • 1 tbsp tomato puree
  • 50g peanuts or cashews (roasted and salted are fine) - roughly chopped or crushed
  • 1 tbsp vinegar (white wine or cider vinegar is best)
  • 1 tsp sugar
