The state of Gujarat is predominantly Hindu, and so Gujarati cuisine is full of delicious vegetarian food, often with a slightly sweet and sour flavour profile. This tomato curry is inspired by a Gujarati dish and is traditionally topped with crunchy, chickpea flour sticks - besan sev - but peanuts work really well too.
