Taco Legend Fisherman's Stew

Inspired by the fantastic one-pot fish stews of Portugal, this light and fragrant dish has been given the Taco Legend treatment with our CANELA BLEND and some fresh lime to add a delicious Mexican twist. It's a really easy dish to make - just layer everything in a deep pot, leave to simmer away and create its own sauce, then steam the fish on top just before serving. It's so simple, you can make this on a fishing boat in the middle of the ocean!

Shopping List

  • 500g mixed fish or seafood (fish pie mix is ideal for this!) - cut into large bite-size pieces if necessary, or use a mix of green beans (cut into bite-sized pieces) and marinated artichoke hearts for a veg version (following the same cooking instructions)
  • 400g waxy potatoes (peeled if you prefer) - cut into 5mm thick slices
  • 1 large onion - thinly sliced
  • 3 cloves of garlic - roughly chopped
  • 1 pepper (any colour) - thinly sliced
  • 6 medium tomatoes - thinly sliced
  • 1 lime
  • 10g bunch of coriander (optional) - roughly chopped
