Taco Legend Shakshouka

Shakshouka is of Maghrebi (Ottoman North African) origin, developed after the Columbian Exchange introduced tomatoes and peppers from the Americas into Africa and Asia. Here we’re using the Taco Legend spices to give it a Mexican twist, creating a dish that's great for brunch with hot pitta breads or tortillas on the side.

  • 1 pepper (any colour)
  • 4 tomatoes
  • 1 avocado (optional)
  • 4 eggs (any size)
  • 1 x 198g tin of sweetcorn
  • 2 tbsp tomato puree
  • 1 tsp sugar
  • Tortillas or pitta breads to serve
