Here we're combining three familiar dishes from a British-Indian restaurant menu that work fabulously together; smoky, spicy tandoori chicken served on a bed of rich, fragrant pilau rice, with a sweet, creamy mint raita on the side. The typical bright red colour of tandoori chicken is often achieved by using food colouring, but here the spiced yogurt marinade contains plenty of vibrant Kashmiri chilli powder for a more natural colour and fantastic depth of flavour.

  • 4 chicken legs or large thighs
  • 2 onions
  • 2 cloves of garlic
  • 25g bunch of mint or coriander
  • 1 lemon
  • 300g natural yogurt (full fat is best)
  • 1 tbsp tomato puree
  • 50g raisins or sultanas
  • 20g sugar
  • 300g basmati or long grain rice
Spices included

Raita Blend: green chilli, garlic, onion, coriander leaf

Pilau Blend: brown MUSTARD, turmeric, coriander, cumin, fenugreek leaf

Chicken Marinade Blend: coriander, cumin, Kashmiri chilli, paprika, smoked paprika, turmeric, garlic, amchur, salt, ajowan, mint, black pepper, ginger, asafoetida, fenugreek, fenugreek leaf
