Tlayuda

Tlayuda (pronounced 'cli-you-da'), are a favourite dish from Oaxaca state in central Mexico. They're made of a large toasted crispy tortilla topped with refried beans, cheese, salad and salsa. It's a bit like a Mexican pizza, just with much fresher flavours!

To make this recipe, you'll need:

Shopping List

  • 2 avocados - thinly sliced
  • 1 little gem lettuce or ¼ iceberg lettuce - thinly sliced
  • 4 tomatoes or 200g radishes - thinly sliced
  • 1 clove of garlic - finely grated or crushed
  • 1 chilli (any colour) - roughly chopped (seeds removed if you prefer less heat)
  • 10g bunch of coriander (optional) - roughly chopped
  • 2 limes
  • 200g mozzarella or cheddar cheese - coarsely grated
  • 1 tbsp tomato puree
  • 4 large tortillas or wraps
  • 2 x 400g tins of black beans or pinto beans (including all the liquid from the tins)

Goes Great With

Using Oaxacan cheese instead of mozzarella

Also Works a Treat With

Adding a few slices of chorizo or bacon on top of the refried beans before baking
