One of the oldest crops used as a spice and to produce oil, sesame has a sweet, nutty flavour, made even richer here by being toasted. It's used in large quantities everywhere from North America to Japan and Korea via the Middle East, and despite it's rather plain appearance and mild taste, is one of the most important spice crops grown globally.
